Simple Crêpes

Here is a simple crepe recipe that can be used to make sweet or savory dishes. This recipe is also a great way to involve your kids in the cooking process. Try different fillings and explore the limitless possibilities a crepe can offer.

Ingredients:

1 3/4 cups all-purpose flour
2 cups whole milk at room temperature
3 large eggs at room temperature
2 teaspoons of white granulated sugar (for sweet dishes only)
Pinch of salt
Unsalted butter, to coat the pan

Preparation:

1. Mix all of the ingredients with a whisk (except the butter) in a large bowl and set aside.

2. Place an 8 inch sauté pan over medium heat, coat the bottom with a small amount of butter, and when hot, pour 1/3 of a cup of the crepe mixture into the center of the pan.

3. Quickly swirl to spread evenly, then flip after 30 seconds. Allow the crepe to cook for an additional 30 seconds on the other side, and repeat the process.

Some sweet serving suggestions are: strawberries and/or bananas with Nutella, blueberries and whip cream, a thin layer of your favorite jam, or with a thin layer of butter and sugar.

For savory dishes you can try filling them with scrambled eggs and peppers, ham and cheese, or ratatouille and Béchamel sauce. Anyway you eat it, I guarantee it will be delicious.
