Arepitas de Yuca (Dominican Yuca Fritters)
Crispy, flavorful fritters that go with everything

This simple recipe was something I truly enjoyed when I was growing up in the Dominican Republic. Easy to make, you can top it with tuna tartar, put as a side with a protein, or eat by themselves as an appetizer!
Ingredients:
One large yuca, grated
One egg
Anise
Salt
Avocado oil
Preparation:
1. Place grated yuca in a large bowl. Add a few pinches of salt, and mix thoroughly.
2. Add some anise to the yuca, and mix thoroughly. Anise is a strong spice, so put a smaller amount in to taste.
3. Add one egg to the yuca, and mix well.
4. Add avocado oil to a medium size pan, coating the bottom well, and place on medium-high heat.
5. When oil is hot, form small yuca patties with your hands and a large spoon, and place in oil. Cook for 2-3 minutes on each side, and turn when nice and brown.
6. Let fritters dry on a cooling rack, and add some more salt to taste.
