Broccoli Soup
Simple real ingredients, simply delicious

This broccoli soup brings out broccoli's wonderful flavor, pure and simple. Put exploring veggies on your list of things to do, because not only are they healthy, but also super delicious.
Presentation is key when teaching your kids about veggies, and if you give them a flavorful soup with only delicious, real ingredients in it, I guarantee they will love it.
Ingredients:
1 head of broccoli, cut into pieces
3 cups of vegetable stock
1/4 of a small yellow onion, cut into chunks
2 garlic cloves, peeled but not cut
1/4 teaspoon of ground oregano
1 tablespoon of fresh cilantro, roughly chopped
Extra virgin olive oil
Salt and pepper
Preparation:
1. Place all the ingredients into a 3 quart saucepan except the olive oil and cook covered over medium-low heat for 10 minutes.
2. Allow it to cool down for a couple of minutes, then blend with your preferred blending system.
3. Serve with a drizzle of extra virgin olive oil on top, and perhaps some crusty bread on the side.
This soup is a great example that vegetables hold up surprisingly well on their own, and don't always need cream or cheese to prepare them.
