Chunky Banana Bread

Banana bread has always been one of my favorite things to eat. I find its flavor and chunky texture simply comforting on a lazy morning, and when making banana bread, the sky's the limit. You can add chocolate chips, raisins, walnuts, dried fruit - whatever you have on hand makes a great addition! This is a perfect breakfast treat and kids love the taste.
Ingredients:
3 small overripe bananas
½ cup of dried cranberries
½ cup of chopped hazelnuts
1 cup of whole wheat flour
1 cup of dark brown sugar
2 tablespoons of melted butter
1 tablespoon of ground cinnamon
¼ teaspoon of ground clove
¼ teaspoon of nutmeg
½ teaspoon of all spice
1 teaspoon of good vanilla extract (optional)
½ tablespoon of baking soda
½ tablespoon of baking powder
1 egg
Preparation:
1. Preheat oven to 375 degrees.
2. In a large bowl, take a fork and mix the sugar with the melted butter and egg.
3. Add the vanilla, clove, cinnamon, nutmeg, all spice, baking soda and baking powder.
4. Mix in the mushy overripe bananas into the bowl, making sure all is well combined.
5. Add the flour and when fully incorporated, add the hazelnuts and cranberries.
6. Pour the mixture into a non-stick loaf pan and bake until fully cooked, about 40 minutes.
You can tell if it's fully cooked when you stick the center of the bread with a toothpick or knife, and it comes out clean.
Makes one loaf.
