Classic Caesar Salad
The table-side salad that's been a classic for generations!

We think we know the Caesar salad, but sadly the taste is usually from a bottle of dressing poured over salad. But this restaurant staple is a wonderful salad to make and eat - and tastes NOTHING like dressing from a bottle. Make sure to use fresh ingredients for a salad that's truly next-level.
Ingredients:
1 head of romaine lettuce, cleaned and cut as desired
3 flat fillets of anchovies, minced
2 teaspoons of Dijon mustard
1 tablespoon of freshly grated Parmesan cheese
1 to 1 1/2 cups of croutons-make them at home!
1 garlic clove, cut in half lengthwise
The juice of 1 lemon
A dash of Worcestershire sauce
Good Extra Virgin Olive Oil
Salt and pepper
Preparation:
1. Cut the garlic clove in half, and use it to rub the bottom and sides of a large salad bowl. Save the remaining garlic for later use.
2. To the same bowl add the mustard, Worcestershire sauce, minced anchovies, lemon juice and grated Parmesan cheese. Mix well with a whisk while simultaneously pouring the olive oil with the other hand. After pouring a small amount, taste - and if more oil is needed, add it.
3. Finish the dressing by seasoning it with a generous turn of fresh black pepper, and just a small pinch of salt. Be careful not to over-salt the dressing, as the anchovies and cheese already have salt.
4. Once the dressing is done, add the lettuce to the bowl, followed by the croutons. Mix well enough to coat each leaf.
5. Garnish with some shaved pieces of Parmesan and cracked pepper, and serve immediately.
