Ingredients:

3 cups of All-Purpose flour
1 cup of lukewarm water
1/4 cup of good extra virgin olive oil + extra for the bowl
1 tablespoon of cane sugar
1 tablespoon of instant yeast
2 teapoons of salt

Preparation:

1. Preheat over to 400 degrees.

2. To a small bowl add the lukewarm water and yeast, and put it aside for 5 minutes.

3. Add the salt to the flour, and whisk the mixture to remove any lumps.

4. Once the 5 minutes have passed, add the sugar and olive oil to the yeast mixture, and stir well.

5. Make a hole in the center of the flour mixture and add the liquid to it. Mix from the outside of the bowl inward, until it becomes thicker, then use your hands to finish mixing.

6. Add some olive oil to a clean heat-resistant bowl, place the dough in it. Rub some olive oil over the dough, and place a towel over the bowl. Place on top of your warm stove and let it sit there for 30 minutes.

7. After 30 minutes, remove the bowl from the top of the stove, and place the dough on a surface where you can kneed it. Kneed the dough 6 to 8 times. *WARNING* the bowl will be hot, so remove it with caution.

At this point, the dough is ready to be divided for two small pizzas or used as is for a larger pizza. You can also use the dough to make calzones or freeze it for future use.
