Garlic Green Beans

Green beans from a can or frozen bag are just not the same as fresh and crispy ones, so buy fresh green beans for your guests and they will thank you! This dish is light and a great side for the holidays, because it balances the heavier dishes you will be serving. The best part is that you can cook this in about 15 minutes, perfect for busy gatherings. Enjoy!

Ingredients:

1 pound of fresh green beans
4 gloves of garlic, completely mashed
1 teaspoon of Thai red chili paste
1 tablespoon of pure olive oil
1/2 cup of water
Salt and pepper

Preparation:

Wash and cut the ends of your fresh green beans, set aside.

2. Mash the garlic cloves very well, preferably in a mortar, set aside.

3. Place a wok over medium-high heat (or a medium sauté pan), add the oil and wait for it to get very hot but not smoking. If you do not have a wok use a large non-stick sauté pan.

4. Add the garlic to the hot oil.

5. Once the garlic is fragrant, after about one minute, quickly add the green beans, salt, pepper and sauté for about three minutes, continuously moving it.

6. Add the water to the wok and lower the heat to medium. Let the beans cook until most of the water has evaporated. At this point remove the portion destined to feed your infant and blend it with additional water until smooth.

7. Add the chili paste to the remaining beans, making sure all beans are evenly coated. Serve hot.
