Green Goddess Chicken

Is that a choir of angels I hear singing? Why yes, it is. Green Goddess sauce is a great marinade for chicken or turkey. In addition to the flavoring agents, the buttermilk adds lots of flavor to the chicken. While I prefer to use it mostly for cooking, but you can also use this sauce as a dressing - remember, a little bit goes a long way.

Ingredients:

1 ½ pounds of chicken (I prefer bone-in thighs)
2 cups of buttermilk
1 cup of fresh cilantro
2 scallion bulbs
4 garlic cloves
1 teaspoon of black pepper
2 teaspoons of water
Juice and zest of one lime

Preparation:

1. Preheat oven to 400 degrees.

2. To make the green goddess sauce, blend all of the ingredients in your preferred blending system, except the chicken.

3. Place the chicken in a large Ziploc style bag and pour the sauce over it. Close the bag very well and shake it until all of the pieces of chicken are properly coated. Place the sealed bag into a medium bowl and into the refrigerator for 30 minutes to 1 hour.

4. Once the chicken is done marinating, place it in a deep baking pan, with a pair of tongs.

5. Pour about ½ cup of the liquid in the bag over the chicken, discard the rest, and roast for 30 minutes.

6. At this point, remove from the oven and drain most of the fat from the pan, leaving only about ½ cup. Put the pan back in the oven and cook for another 20 minutes or until golden.

Serve hot with your choice of side - and watch your friends and family ask for thirds.
