Halloween Pumpkin Peppers
Spooky peppers filled...with brains!

This Halloween, enjoy these filling - and filled with BRAINS - peppers! Orange or red peppers work best. Great with a spooky salad, scary soup or creepy-crawly appetizers!
Ingredients
4 orange or red bell peppers
2 cups of rice (brown or white)
14 oz of beef-less ground beef (you can also use really ground beef if preferred)
1 cup of vegetable stock
1/2 of a medium yellow onion, diced
2 cloves of garlic, minded
1/2 of a small green bell pepper, diced
1 tbsp of tomato paste
1 tbsp of worcestershire sauce
Cayenne pepper (optional)
Dry oregano
Dry basil
Pure olive oil or avocado oil
Salt and pepper
Shredded mozzarella or any cheese that melts well.
Preparation:
1. Carve faces on your peppers like you would pumpkins.
2. Cook 2 cups of rice like you normally would. When done, set aside.
3. To the bottom of a large pan on medium heat, add some olive oil. When hot, add your onions and sweat until translucent.
4. Add minced garlic and cook for about one minute or until fragrant.
5. Add the diced green bell pepper, tomato paste, cayenne pepper, oregano and basil to taste, worcestershire sauce, and stock. Mix well.
6. Add ground beef, and salt and pepper to taste. Mix well, making sure all is evenly coated with the seasoning.
7. Cook for about 20 minutes (or until meat is fully cooked, if using real meat).
8. Mix the ground beef with the rice in a large bowl and use the mixture to stuff the carved bell peppers.
9. Top peppers with some of the shredded cheese and place under the broiler for a couple of minutes or until melted.
10. Serve and enjoy.
