Homemade gravlax (Lox)
Great on a bagel or by itself!

Making Gravlax, or Lox, at home is EASY. Why buy when you can make it fresh in your own kitchen? Salty and satisfying, with minimal ingredients and prep!
Ingredients:
1 thick salmon fillet with skin on
Vodka
1 cup salt
1 cup sugar
1/4 cup dill
zest of 1 lemon
Preparation:
1. Place salmon on a tray, and place that on second larger tray to avoid any spillage.
2. Put 1 cup sugar and 1 cup salt in bowl, and mix well.
3. Add 1/4 cup dill, and zest of 1 lemon to salt/sugar mixture and mix well.
4. Put a thick coat of the mixture all over the salmon, packing it in on every side of fillet.
5. Double-wrap the tray with aluminum foil, and place in the bottom shelf of fridge for four days.
6. After four days, remove from fridge, and remove salt mixture from salmon fillet. Give the fillet a quick rinse to remove any excess salt. Slice salmon thinly, and enjoy!
