Red Quinoa Salad
Nutritious, delicious and fast!

This is a great dish that's full of flavor, and it's great *for* you. It goes great with any piece of grilled chicken or fish, roasted cauliflower, or as is. But the best part of it is that it can be done in as little as 20 minutes! Super convenient for those super busy parents that are looking for good and interesting things to prepare for their families.
Ingredients:
1 cup of red quinoa
1/2 cup of frozen baby peas
1/2 cup of golden raisins
1/4 of a medium yellow onion, diced small
1/2 of a red bell pepper, diced small
1/2 of a green bell pepper, diced small
1 tablespoon of cilantro, finely chopped
2 cups of vegetable stock
Juice of 2 lemons
2 tablespoons of Extra Virgin Olive Oil
Salt and black pepper
Preparation:
1. Place a 2 quart saucepan over medium-high heat.
2. Add the red quinoa, peas and the stock. As soon as it comes to a boil lower the heat to medium-low, cover and let cook for 20 minutes. Prepare the other ingredients while the quinoa cooks.
3. Once the quinoa is ready, fluff with a fork and let cool for 5 to 10 minutes.
4. In a separate bowl, mix the diced peppers, onions, cilantro, raisins, lemon juice and olive oil.
5. When the quinoa has cooled down, add it to the bowl with the rest of the ingredients, as well as salt and pepper.
