Roasted Pork

Roasted pork, if done properly, can be decadent and very satisfying. If you have a pressure cooker it will cook in 45 minutes, but for this recipe I will demonstrate how to cook the pork in the oven.

But look into a pressure cooker, they are so good!

Ingredients:

1 1/2 pounds of boneless pork roast
3 tablespoons of Pure Olive Oil
1/2 of a large yellow onion, diced
3 cloves of garlic, finely chopped
1 teaspoon of old style Dijon mustard
1 teaspoon of brown sugar
1/8 teaspoon of smoked paprika
1/4 teaspoon of dried thyme
1/4 teaspoon of ground oregano
1/4 teaspoon of crushed red pepper flakes (optional)
1 1/2 cups of water
Salt and pepper

Preparation:

1. Preheat oven to 400 degrees.

2. Season the pork with salt and pepper and set aside.

3. Add oil to a 5 1/2 quart cast-iron Dutch oven over medium heat on your stove top.

4. When the oil is hot add the onions, and sweat for about 1 minute, then add garlic and sweat for another minute until they are both translucent.

5. Now add the mustard, paprika, sugar, oregano, thyme and red pepper flakes. Mix well.

6. Add the pork, brown on all sides, then add the water and cover.

7. Place in the pre-heated oven and cook for 1 1/2 hours, or until very tender.

When serving, squeeze some lime over the pork for extra tang. Serve with wheat pilaf, wild black rice or any other choice of rice. It also goes well with yuca, in a sandwich or in tacos.
