Simple Summer Salad
Because salads aren't just for lettuce!

This salad is a perfect light lunch during these hot summer days. You can accompany it with some crostini and glass of freshly squeezed lemonade. It's a vacation on a plate!
Ingredients:
12 cherry tomatoes, cut into halves
1/2 cup of mozzarella, cubbed or in strips
1/4 cup of good smoked salmon
5 fresh leaves of basil (I used purple basil but regular is also fine)
White balsamic vinegar to taste
Extra virgin olive oil to taste
Salt and pepper
Preparation:
1. To a bowl add the tomatoes, mozzarella and smoked salmon.
2. Add the vinegar, olive oil, salt and pepper then mix, ensuring everything is coated well.
Plate and garnish with the fresh basil. Enjoy!
