Summer Fish Tacos
Time to have a taco party!

These fish tacos are the perfect solution to the question 'what's for dinner?' They are light, inexpensive and super tasty. Perfect to make with your family and incredibly easy to make for a large number of guests. The flavors in this dish will make you wonder why you don't make these more often.
Ingredients:
2 tilapia fillets
12 corn tortillas
½ cup of fresh cilantro finely chopped
¾ cup of onions cut into small dice
1 ½ cups of tomatoes cut into small dice
2 garlic cloves, minced
½ tablespoon of ground oregano
½ tablespoon of sweet paprika
½ teaspoon of cayenne pepper (optional)
2 tablespoons of pure olive oil
2 limes, quartered
Salt and pepper to taste
Preparation:
1. Preheat your oven to 350°.
2. Put your tortillas on a sheet pan and set aside.
3. Heat a sauté pan with the olive oil over medium heat, add garlic and sweat for about one minute.
4. Season the fish on both sides with the oregano, paprika, cayenne pepper, salt and black pepper. Tilapia is thin, so it is easy to cook and absorbs flavors very well.
5. Add the seasoned fish to the hot pan without moving. You should hear a sizzling sound - this is good, it means that the fish is browning. After 2 minutes flip the fillet and cook for another 2 minutes. At that point the fish should be done.
6. Pop your tortillas in the oven, while you let the fish cool off for one minute. Remove when the minute is up.
Now is time to assemble your tacos!
Cut your fish in chunky uneven pieces. Stack two tortillas for each taco and fill with a little fish, a bit of tomato, onions and top with some delicious cilantro. Squeeze some fresh lime over the tacos and you are ready to enjoy this simple yet filling and flavorful meal. The tacos go beautifully with some fresh avocado slices, lightly salted.
This recipe makes 6 tacos.
