Sweet Ginger Carrots

Carrots are delicious and nutritious, and by adding a little sugar, you can highlight their natural sweetness. Ginger is also very tasty and incredibly healthy, and paired with carrots, it's just the perfect combination. I promise your children will love it! Perfect as a side dish.

Ingredients:

4 large carrots, peeled and sliced on a bias (diagonal) into 1/2-inch pieces
1 1/2 tablespoon of freshly grated ginger
1/4 cup of white granulated sugar
1/4 cup of water

Preparation:

1. Place the sugar in an 8-inch sauté pan over medium heat, allowing it to melt and caramelize.

2. Quickly add the grated ginger to the sugar, and then add the carrots and water, making sure to coat evenly with the caramel.

3. Cover with a lid and let the carrots cook for 10 to 15 minutes, until tender. These carrots are a delicious side that can be served with grilled salmon or scallops. Enjoy!
