One way is not enough to enjoy sweet potatoes!

Sweet Potatoes Three Ways

Planning your meals for the week doesn't have to be a complicated task. Try buying foods that can be prepared in many different ways, to save time and money. For example, these sweet potatoes can be roasted at the beginning of the week, and then enjoyed with different meals on different days!

For all three recipes:

1. Preheat your oven to 400 degrees Fahrenheit.
2. Place all your sweet potatoes for the week on a baking sheet covered with parchment paper or a silicone mat.
3. Poke a few holes on each with a fork
4. Bake for 20 to 30 minutes or until all potatoes are cooked through. You can check this by inserting a knife into it, if it goes through smoothly, it’s done.

To reheat the potatoes of the days of use, just put them in a 400 degrees preheated oven for about 10 to 15 minutes.

*Each recipe below is per potato.

Loaded Sweet Potato

Ingredients:

1 1/2 tablespoon of chopped scallions
1 1/2 tablespoon of chopped plum tomatoes
1 teaspoon of raw jalapeños, diced
1/2 cup of sour cream
1/2 cup of grated cheese, gruyere or gouda are great in this recipe.

Preparation:

1. Slice your baked sweet potato through the middle, but not all the way through. Pull some of the skin back, and use a fork to fluff some of the top part of the potato meat.
2. Add cheese to top, and place under the high broiler for 1 minute, until the cheese is bubbly. Take out and allow it to cool down for about 1 minute or so.

3. Add a bit more shredded cheese if you’d like, then add sour cream, tomatoes, jalapeños and scallions.

Pair with a cup of beans or any other protein you desire. On its own is great too!

Mashed Sweet Potatoes

Ingredients:

1 tablespoon of room temperature butter
Ground cinnamon

Preparation:

1. Take baked mashed potato and cut into slices. If you do not care for the skin, peel it off, if not leave it on.
2. Add butter to sweet potatoes, and mash in bowl.
3. Add ground cinnamon to taste.

Serve and enjoy will hot.

Sweet Potato Fritters

Ingredients:

1 egg
2 tablespoons of shallots, chopped
2 tablespoons of jalapeños, diced
Salt

Preparation:

1. Remove the sweet potato skin, place it in a bowl, and mash well.
2. In a separate small bowl crack your egg and lightly whisk it with a fork, pour into the sweet potato, and mix well.
3. Add shallots and jalapeños, mix well.
4. In a pan over medium-high heat, place one tablespoon of butter or your preferred cooking oil.
5. When hot, add your hand made fritters one by one, and cook about 3 minutes on each side. Move the pan slightly, if the fritters move you can carefully turn them, if not, they need a bit more time.
6. When golden brown on each side, remove and sprinkle some salt on the top.

Serve these warm, with sour cream, cheese, a protein of your choice or eat just as is. They are really delicious!
