Tabouli
Easy summer salad that goes with everything!

Tabouli (or tabbouleh) is a great, refreshing salad that's perfect for the ending days of summer. Easy to make, it's a great family recipe that everyone can help make. It goes great with fish, chicken, falafel, grilled tofu...anything!
Ingredients:
1/4 cup of bulgar wheat
1 large tomato, diced small
1 bunch of parsley, chopped finely
2 tablespoons for mint, chopped finely
2 scallion bulbs, chopped finely
1/3 of a large yellow onion, dice small
Juice of 2 lemons
Juice of 1 lime
1 garlic clove, minced
Extra virgin olive oil
Salt and pepper
Preparation
1. Place your bulgar wheat in bowl and cover it with boiling water. Cover the bowl, let it rest for one hour, then drain well.
2. Mix all the ingredients in a large bowl, and season with lemon and lime juice, salt, pepper and olive oil.
