Tasty Mango Salsa

This recipe is awesome to make with your younger children, because they love to help putting it together and they also love to eat it. Kids will enjoy mixing a bunch of colorful ingredients in a bowl and seasoning them together. Mango salsa is perfect to eat during gatherings, with your family while watching the game, or by yourself while watching your favorite movie. It's light, and packed with flavors that burst in your mouth with each bite.

Ingredients:

1 medium ripe mango, diced
½ of a medium green bell pepper, diced
½ of a medium yellow onion, diced
1 small jalapeño, without seeds and diced (optional)
1 plum tomato, diced
2 garlic cloves, minced
1 tablespoon of cilantro, finely chopped
Juice of one lime
1 teaspoon of extra virgin olive oil
½ teaspoon of ground oregano
Salt and pepper to taste

Preparation:

1. On a cutting board, chop the cilantro, dice the mangoes, peppers, onion, tomato and mince the garlic.

2. Place all the ingredients into a bowl, then add the lime juice, olive oil, oregano, salt and pepper. Combine well, ensuring that all is coated evenly.

Enjoy with chips, also delicious as an addition to grilled fish such as Halibut.
