Tofu Salad

Light and tangy, sometimes you just want to eat clean

Tofu Salad

Here's a light and simple tofu salad. It can be done very quickly - 20 minutes at most. Tofu is a great food to cook with, and absorbs flavors easily. Not everybody likes tofu, but it can be prepared in so many ways that it is always worth a second look!

Ingredients:

1/2 a dry pint of cherry tomatoes, cut into halves
1/2 of an avocado, cut into squares
1/2 of a brick of extra firm tofu, cut into 1/2 inch squares
The juice of one lime
2 tablespoons + 1 teaspoon of extra virgin olive oil
1/8 of a cup of water
Salt

Preparation:

1. Add 1 teaspoon of oil to a 3 quart saucepan.

2. When hot, add the tofu pieces and the water. Let the tofu cook until the water evaporates, turn off and let cool.

3. In a separate bowl place the tomatoes, add the lemon juice add the remaining olive oil.

4. Toss in the cooled tofu squares, making sure all the pieces are evenly coated.

5. Add the avocado chunks to the bowl and mix with the other ingredients making sure not to smash the avocado too much (you do not want guacamole!). Season with salt and serve.
