Tomato Soup
Tomato, Tomahto, either way it's friggin' delicious

Every season is the perfect season for delicious, hearty soups. This tomato soup is flavorful, filling, healthy, and super easy to make.
Ingredients:
1 28oz can of peeled whole tomatoes
2 cups of stock
1/2 of a medium yellow onion, roughly chopped
2 garlic cloves, roughly chopped
1/4 teaspoon of ground coriander
1/4 teaspoon of dry basil
1/4 teaspoon of ground oregano
1 tablespoon of fresh cilantro, roughly chopped
1 tablespoon of pure olive oil
2 tablespoons of sour cream
Salt and pepper
Preparation:
1. Place a 4 quart saucepan over medium heat and add the olive oil.
2. When hot, add the onions and sweat until translucent.
3. Add the garlic and sweat for about 1 minute, then add the coriander, basil and oregano.
4. When the herbs become fragrant add the tomatoes and begin to break them apart with your wooden spoon.
5. Add the stock and the cilantro. Adjust the flavors with the salt and pepper and allow the mixture to simmer for about 15 minutes.
6. Blend the partially cooked mixture with your preferred blending system (I chose to use an immersion blender). Bring the mixture back to the saucepan, incorporate the sour cream and let simmer for another 15 to 20 minutes.
7. Serve with a small dollop of sour cream and rustic bread. OOH, RUSTIC BREAD. So good with this soup.
