Tostada con Huevos

Great for breakfast, brunch, lunch or dinner!

Tostada con Huevos

Any meal is perfect for this filling recipe. It's fun to eat, and you can vary the type of cheese you use, make it mild or spicy, and make it your own.

Ingredients:

4 corn tortillas
2 teaspoons olive oil
4 eggs
1/8 cup milk
1 tablespoon of butter
1 cup black beans
1/2 cup cooked corn kernels
4 tablespoons of salsa-chipotle salsa if you like some heat, otherwise a salsa of your choice
1/2 cup of queso fresco or shredded mozzarella
Salt and pepper

Preparation:

1. Place 1/2 teaspoon olive oil in a non-stick heated sauté pan.

2. Place one tortilla in the pan, and move it around to coat with oil, then quickly flip and coat the other side. Cook tortilla on medium-high heat until crisp, flipping occasionally, then remove and place on plate. Repeat with remaining tortillas.

3. Place four eggs, milk, and salt and pepper to taste in a mixing bowl, and whisk vigorously.

4. Place butter in heated non-stick pan on medium-high heat, and melt, coating the sides and bottom.

5. Add the whisked eggs, and using a spatula move them constantly until just firm, then remove immediately onto a plate.

6. Heat corn and black beans separately, until very hot.

7. On top of a crisp tortilla, rub about a tablespoon of salsa evenly across the top. Then place a layer of black beans, some eggs, then corn, and finally top with cheese. If you like it spicier, add hot sauce to the top. Super rico!
